Darbaar’s cuisine, based on Indian Royal Court banquets, is in similar majestic style. Using traditional techniques of cooking including clay ovens and a large charcoal Robata grill, the menu is split into grills, street tapas, spit roasts, biryani and Royal Indian gravies. Each item equally as punchy and flavourful as the next, encourages sharing and feasting. Highlights include; grilled Royal Bengal style wild Madagascar prawn, Tandoori salmon with Kalamata olives and mushy peas, Goan spiced bass stuffed with shrimp and coconut sambhal, and The Royal Pot (popularly known as Shahi Degh) served in an earthenware pot.
